A couple years back ESPN’s Paula Lavigne came out with a startling report about some of the health department findings in various concession stands at major ballparks and stadiums across the country.

Not long after the article came out in 2010 I had the chance to talk with Paula about her findings, some of the inconsistencies between what was said by individuals she spoke with at stadiums and health departments, and also to discuss Lean principles and how it might be of great benefit to sports organizations looking to avoid being cast in such a negative light due to food negligence.
She’s part of the reason Lean Blitz exists today. She showed me that there is a place for standardized processes, optimization, improved cleaning and organization, and better management in this industry. I’m forever grateful to her guidance.
